I am really interested in playing for the first time the HOMM series, but I was wondering: are each title a stand-alone game with their own story or they are part of a progressive series (storywise). I was tempted to straight up start with HOMM 3 due its reviews, but I will be dismissed if I don't take in to consideration the prior installments.

MM1-MM5 - one story arc

HoMM 1-3 + MM6-8 - another story arc. Some references to the previous story arc.
(Note that HoMM1 barely has much of a story)

HoMM 4 bring the story into a new world. Heroes Chronicles act as a bridge between the HoMM3 story arc and HoMM 4. MM9 theoretically takes places in same world as HoMM4 but is a separate arc and has little resemblance to the previous lore.

HoMM5 onwards (including MMX and Dark Messiah) - complete reboot.

My advice: if you're just interested in Heroes, and not M&M, start with 2 or 3. You can't go wrong with either - both are excellent games.
Do not start with 1: its gameplay is tough and it doesn't have much of a story. If you play and enjoy 2 and 3, you can try 1 then.

Also note that each game has its own story: although it's tied to the previous ones, as explained above, it's still its own story from start to finish.
And story only plays a secondary part in HoMM games. Enjoy them for their gameplay - HoMM3 is one of my favourite games of all time.

The overarching history of the setting does advance over the course of the games, but each of the HoMM games has a self-contained story that handles itself without needing any player knowledge of what happened in the other entries.

For example, HoMM1 is about four different lords (Knight, Barbarian, Sorceress, and Warlock) fighting to establish control of the realm. HoMM2 tells of the struggle between Roland and Archibald for control of the throne, barely mentioning that the Knight is the canonical victor of HoMM1. HoMM3 is about events that happen after the Succession War (HoMM2's campaign), so you know who canonically won HoMM2, but HoMM3 can be played just fine without knowing anything more than that.
