I saw many topics from 10 years ago, and some recents, and i could not find about this question.
Does anyone know what DOS version HoMM1 ran?

I was reading about Microsoft releasing MS-DOS 1.25 and 2.0 on Github, as an open source, and i was curious about what kind of DOS HoMM1 and HoMM2 was built into.

And about the GOG version itself, right now, at Sep 2023, does GOG released the Windows version for both HoMM? Or won't be this possible and will be only DOS version for both?

Refer to DosBox documentation.
No. GOG provide only DosBox builds. There is mmm let say literally two exceptions. HOMM have separate installer (it should be combined cause just 2 exe for one game in one folder was split) and X-com 2 TftD that still keep exe file from Windows version but no links to ot its just in game folder. You find it only if you look there. Moreover there is _win_patched.exe from around 2008 from 2K that did use some fanmade exe to make this.
Like it present in Steam. Like many dos games on steam - have choose at launch which one start with dosBox just default.

GOG always rip windows versions even from such games as HOMM that originally dos+win. Also they highly repack their ScummVM releases, they are ripped too with custom non original exe and not possible to use any alternate DOS VM.

All such games got Win executable as superior versions or later "Gold" re-editions and latest patches for win exe only. HOMM1/2 also improved in Win variants but only HOMM2 got such build. Since it was Winox and very old DirectX and even WinG - some tweaks was made to HOMM2 compatibility. I guess same jeed for HOMM1 and GOG lazy. DRM things as well. Even original publishers often not provide any game content(!)/sources and GOG just take discs they found and make cracks themself (ZOOM Platform do the same but as i get it - they want to use discs versions for older games and not other stores re-editions).

Strange question regarding how long you on GOG. You maybe mean did they bring Win version back for HOMM1 just like they did long ago for HOMM2? No. And they dont care enough to do that.

BUT! There is disc image which one probably not ripped (not guarangeed). You can try use it to getbwindows executable and maybe else missing files in DosBox build.
