I used to play HOMM 1-3 all the time when they were new but never played the campaigns. I thought the standalone maps were more fun (and easier). But now that I've been finished MM6 & 7, I've decided to finally play through the campaign of HOMM 2 and 3 for the story.

HOMM 2 seems easy enough so far, but it's struck me how big a part luck plays and the reliance of crap AI. On mission 2 for example, when you start out in the middle, there was really nothing I could do on my first attempt as two of my opponents went for my castle almost immediatley. On my second attempt, two of the AI's bugged out and just kept walking around in a loop, never advancing. The third stuck to his starting area for a bit longer. Giving me the chance to build up an army strong enough to defeat him once he finally attacked.

What are some good strategies for HOMM2 and what class offers the easiest campaign? I've always gone with Knight for example, but perhaps that's going for the most difficult route.

In HOMM2, the warlock (that is, the one that has access to dragons) is almost universally acknowledged as the most overpowered class.
As for stategies, the usual one, regardless of class, is to recruit one or two "mule" heroes as soon as possible to merge all the troops into your main hero: start levelling up this one while the others run on a loop gathering all the weekly renewed resources, shipping new troops from the town to the main hero, and the occasional castle defence... mid-game you might want to promote a second hero to a more active role, and start to use him as a "softener" for the most hard encounters (attack with hero 2, do as much damage as you can, focusing on ranged/flying units, retreat and then follow immediately with an attack from the main hero)
1. Heroes 2 campaigns are harder than H3 ones.
2, I don't remember a good strategy apart from the fact that you should move fast most of the times. Don't linger near your castle waiting for the top tier creature building to be finished. Crush your enemy before he has time to develop his forces. He often has more towns than you so the more you wait, the harder it will be. Oh, and in one map, I don't recall its name, but it has a lot of sand, you would do much better if you could hire or start with a Barbarian hero (becasue he has Pathfinding).
In HoMM 2 I likes the Sorceress castle. The Elves and Druids combined with a Barbarian main commander with Mass Haste and Mass Slow is a winning combo. In long, drawn out maps/campaign the Warlock troops will be better due to dragons, though.
For secondary character a Warlock is good for scouting and a Sorceress is good for exploring the sea.
Secondaries for bringing troops to the front and for doing the weekly collection of troops and resources are also important.
