Two options:
If original game files, add this as parameters when launching the game (change w and h numbers to match your screen): -width 1920 -height 1080 -bpp 32
If Steam, you can right click game, properties, general, put i Launch Options.
In GoG: um, also posible somewhere in galaxy. But can also add to end of executable if right click game icon in start menu and go to properties.
Second option:
Use Hammer of Therion source port:

I think this lets you actually set the resolution in game, unlike the original which just shows you them.
