Once you start a game, your max HP, mana and the 4 attributes are slightly randomized. It might be worthwhile to restart the game a few times until you get good rolls for HP, mana, Strength (melee damage) and Wisdom (experience boost). Dexterity and Intelligence do absolutely nothing so don't bother with high rolls there.

It is entirely possible for example that because of RNG, you would be playing a Paladin with less HP than a Necromancer.

I made a post about this just now... how do you see your stats and quest inventory in game?
The Help option says tab but it does nothing, and the keybindings doesn't even have a setting for your stats screen....

It's called "full inventory" in keybindings.
