Starting from the day 2 it is possible to obtain key for the school broom closet. However, whenever I use key on the door, I get a message that principal (who is not standing there, btw) signals me to move away from the door, and key gets dropped (I can pick it up again, though). I've checked with the solution, and it claims I should be able to enter the closet at that point in game.

I wonder if it's a problem with GOG version or I'm just doing something wrong. Has anyone managed to spy on the principal successfully in GOG version?..

I just finished the game, so it's not GOG's version fault. I don't really understand your issue. What I did is giving the kid the sneakers in exchange of the key. When I got the key, the school was desert: the principal wasn't on the fountain nor could I access to the sadistic teacher's classroom (because they are screwing in the closet). I just used the key on the door and it opened, revealing the two perverts inside. And after that, I could either blackmail them or just "talk".

I've just finished the game and had the same problem.
At first I was able to open the door and spy on them, then, after loading from a previous save, I couldn't do it anymore and the same message appeared.
The day after though I was able to open it so I would suggest you to just proceed with the main quest a little bit.
