I was able to get my Xbox One controller working on the GOG edition of Gris without too much trouble. Here is what I did:
1) I turned off all other bluetooth devices except for the Xbox One controller.
2) I closed Steam.
3) I opened Gris through GOG Galaxy. When the game intially loaded on the main screen, my controller did not work. But simply turning the controller off and on again did the trick, and the controller works beautifully.
I'm not confident (3) will work if there are other bluetooth mice or keyboards, or if Steam is hogging the Xbox controller input.
Also, I play Gris with rumble on, and that is definitely the way to go, so it's worth playing with a controller. It adds a lot to the aesthetics of the game.
