I've looked through the game files, but I can't find the manual and there doesn't seem to one available for download. Where is it?

The Remastered edition doesn't come with a manual. You can find a scanned copy of the original manual here: https://www.mocagh.org/lucasfilm/grimfandango-manual.pdf
