Well everything so far has been a learning curve, first on getting lgogdownloader to work properly, it downloaded fine, took a while of course, my issue is that I can't run the game nor I can find a way to run it through the terminal itself. I downloaded it, extracted it and I'm lost, using Ubuntu 14.04.6; gtx 750 ti (runs open gl 4.4), amd x64 quad core.3.7; honestly I don't know what I'm doing wrong or do I have the wrong expectations of finding an installer or a way to run it through the terminal?

Please, please, help.

There's your mistake. If you want to install it you need to <span class="bold">run</span> the installer not extract it.

I actually do prefer to extract the installers myself. In which case to extract/run the game:
7z x gog_grim_fandango_remastered_2.3.0.7.sh
cd data/noarch/
./start.sh
