Does GOG use updates and patches like Steam does?

Yes. You can either use GOG Galaxy and that will update automatically or you can do a manual download and installation yourself.if you don't want to use Galaxy.

So that is no, as Steam has not this choice. Is GOG compelling me like Steam?: No.

If you play the game offline with Steam it won't update the game.

And in 2 or 3 weeks when you can't reach internet (it happens for those working long in some foreign countries), you'll even be forbidden to play, that' is called the "off-line mode".
