I can read that the digital versions have been updated to include the "system pack" mod for compatibility with modern OS, but for those of us that like to play on a period system, it would be nice to be able to have access to the original, unmodified game (which anyone could install the system pack to themselves anyway if they so choose). If I buy this on GOG will it allow me to install the unmodified version of the game or must I resort to piracy (is preservation)?

The system pack is only installed by default on the Steam versions of Gothic 1&2, with the originals available via the beta branch. The GOG versions are the originals: Gothic (version 1.08k) and Gothic 2 Gold (version 2.7).
