I was trying to block a wolf with a shield earlier today, but no matter how many times I tried, it just didn't work.
BTW I had the CP 1.74 installed, and Alternative Balancing and Alternative AI turned on. Also I'm playing on medium difficulty.

Attacks by wolves can't be blocked, AFAIK.

I try to get a decent bow, build hunting skills and pick them off.

Animal attacks can't be blocked. Your best bet against most animals is to go on the offensive and try to corner them then stun-lock them with your attacks until they die (although there are some exceptions to this, such as with trolls and shadowbeasts). If you're finding the animal you're fighting jumping back whenever you try to attack it can be more useful to go with the quick finesse attacks, as those tend to land more often against animals that try to dodge your blows.
