So, when I'm fighting anyone armed with a weapon, there seems to be about a 50% chance that they kill me in one hit, even if I'm blocking. But the rest of their attacks just do a minor amount of damage and give me a fair fight, so I don't think I'm just underleveled/underequipped.

Any idea why that's happening and how to prevent it? The guy guarding the bar in Khorinis Harbor tends to do it every few hits, and the bandit mercenaries attacking Alkil's farm give me about a 50% chance of killing one before he suddenly kills me without warning.

It's the critical hit chance. Your weapon skill gives the %chance of a critical hit. A critical hit equals the weapon damage plus your strength. A non-critical hit is 10% of that with a minimum of 5 damage. So, if you're fighting a higher level opponent, they'll crit you fairly often.

But I've killed every enemy outside of the south gate already, enemies outside the east gate are nearly impossible for me to take down without help by the guards.. if my problem is being underleveled, how the heck do I level up? I took an apprenticeship with the bowyer but there's no wolves left to skin, and every other apprenticeship requires me to fight enemies who are far out of my league.

It's an amazing game so far, incredibly deep and with a lot of cool aspects, but I constantly feel roadblocked by the difficulty curve.

It's hard until you learn the tricks. Also, I find using a bow is a little easier than melee. One thing you could try is a transform scroll. Get the lighthouse quest from Jack in the harbor and then clear them out by transforming to a firelizard. The same idea for Erol's bandits. There aren't too many available so you need to use them sparingly.
From what I've read, the Night of the Raven add-on in the installer really ramps up the difficulty. Installation of the add-on is optional so may want to reinstall without NotR, play a bit of the 'vanilla' version to figure out how things work in the game, and then reinstall and restart with NotR.
