gothic 3 was a bit wild, but you just didn't try it serious.
on release, yea, the boar in the first bunch of trees outside the beach village would do athousand hits within 5 seconds, but that was fixed quickly. the game has an open world with almost all enemies present from the beginning, so you can challenge yourself, but if the game is challenging you too much, you simply didn't go to where you were supposed to go to and so you met enemies you weren't meant to meet yet.
that being said, if you give it another try, i've played it twice (once twohand, once dualwield) and my back-then best friend played it as firemage; we came to the conclusion that firemage was overpowered. so, for a quick runthrough, maybe go with that. for a unique gameplay, go dualwield, it's super fun to swing sharpened poisoned masterswords left & right with left & right mouse buttons (and yes there's a legitimate way to get 2, i found it back then w/o inet).
despite some bad critics, i liked the game quite much. the world felt a bit empty, but better that than "gothic 4 arcania" with it's absurd wannabe storyline.
In my opinion, the main problem of Gothic 3 is storylessness. Through almost the entire game you are simply visiting autonomous towns and doing local quests. The actual main plot offers you a single choice and a short end-game sequence.

Therefore, playing Gothic 3 for the first time you have absolutely no idea, where to go. But the game is not a sandbox, and while not strict, there is a certain order of exploration. You just need to determine it yourself using trial and error approach. :)

And for those, who find the game too hard, I would recommend to turn off Alternative AI and Alternative balancing. Both settings were introduced in the Community patch to make Gothic 3 more challenging for experienced players.
