My monitor is widescreen, but the game doesn't list any widescreen resolutions. Also when i tried to get it to run on my 2nd monitor (which is not widescreen) by choosing the 2nd driver, it stayed on the first monitor. I could live without the multi-monitor support issue, but it would be really nice to have native widescreen support.

That's odd... my screen is also widescreen (1680x1050) and the game runs in this resolution on my PC.
Does your screen use a DVI or VGA connection ?

According to this wiki, Giants should support widescreen natively. I can honestly say that I have no idea why the game isn't listing any widescreen resolutions for you.
Have you tried forcing the game to run on one monitor (completely removing the second monitor + drivers)? I know it's a bit extreme but I have encountered software before that was really picky with the way it wanted to be set up.
Interesting, I too am running widescreen @1680 x 1050 and it works just fine. It might be a driver issue but I'm not sure. At least I would try deleting the current video drivers before installing the latest ones if you haven't already.
I get 1920X1200 in the list and it works here... (Radeon 4870 and a 24" LG LCD)
I still use the original disc for Giants, but I haven't had any problems getting it to run in widescreen.
In my dual screen configuration, Giants seems to always use the screen marked as primary in the Control Panel, no matter which driver I pick in-game.
I'm not having problems running it in widescreen with dual-screen enabled, but both screens support the same resolutions so I can't tell if the game eventually privileges one of the displays when it comes to listing the available modes (EDIT: with a fast google search I've found some user reporting that the game lists only the resolutions available on the smaller screen).
I'd try to temporarily disable multiple screen support in NVIDIA Control Panel/ATI Catalyst Control Center and run the game with only the widescreen display active (as suggested by Klink, but without removing drivers/monitor, just using the GPU Control Panel), if you haven't already.

They are both DVI 1680 x 1050 and 1280x1024 respectively.
I just noticed that the game lists support for 1280x800 which is a common widescreen resolution on 15" laptops. I'm wondering if its limiting itself to the capabilities of my 2nd monitor even though its using the first.

That was it. I disabled my 19" and selected 1680x1050. Then i left the game re-activated my 2nd monitor and started the game and it works. I did notice some graphical glitches that weren't in the non widescreen version on the title screens. There are vertical black lines on it. I can totally live with it though. I remember a lot of games that were designed for the 3dfx boards that would do something similar due to the limitation of texture sizes back in the day.

I was really pleasantly surprised to find that this game supports my monitors resolution of 2560 x 1600 with absolutely no problems and actually looks really good considering its age. Im guessing that extra resolutions were added specifically for gog.com?
