Does anyone know if there's anyway you can play this game with a PC controller? I couldn't find any options in the menus and simply pressing a button on the controller while trying to map keys didn't work. :(

Unfortunately, despite being a console port, the game does not support any type of controller so you need some sort of joystick mapping/profiling tool.
If you have a Logitech pad, you can download Logitech's profiler software for free, and download a profile that should work for you.
If xpadder supports it, definitely map your right analog stick to mimic mouse movements, otherwise it will be almost impossible to aim or steer.
