I was wondering how the save system worked. I noticed in the demo that if I died I would just get kicked back to the latest checkpoint but when I quit the game and went back in I had to start from the beginning. How does saving work in the full version ?

Same.
When you quit the game, you have to restart the whole level you were at, checkpoints are lost.
