Presumably b/c of legal reasons GOG couldn't include the soundtrack as free bonus content (shame), but I did find the music on YouTube:

Is the music amongst the installed files?

They could still add it later as they did with the rayman games and others.
Also Avatars and more Wallpapers woubd be nice

Is the music amongst the installed files?
The music is in the MUS subfolder in the Gex folder.

You can open the music with Audacity by importing raw with settings in the attached picture.
