I tried to Hide a few duplicate games so that my preferred platform for that game is what shows. But once hidden, the games show up again as soon as I switch tabs and then back to All Games. Shouldn't they stay Hidden unless I turn on Hidden games in the filters?

Maybe you should report it with the "report issue" function of the Galaxy client.
I tried to repdroduce the error but in my case its working as it should ( at least with gog and steam games)
