I have just linked a few of my accounts, but i just saw that GOG has it´s own " keep games updated "

If i have a game on STEAM as Fallout 4 marked with do NOT update, will GOG override this or does STEAMS restriction carry over and run as the default setting?

GOG Galaxy 2.0 does not automatically update games from other platforms. You still need to run Steam to update games from that platform. For GOG games you can turn off automatic updates globally and/or per game.
