Grinding was absurd, only a small number of players actually got to see the best content and a number of anti-frustration mechanics we take for granted now simply didn't exist back then - in fact, the developers back then argued against a number of them, I think.
Because it was actually hard. I won't disagree that some parts were stupidly grindy (grinding for gold was lame and so was respec costs to get out of your raid spec or back in). But IF you were in said exclusive club of end game raiders, there hasn't been much since then, afaik, that's ever come close.

Karazhan and Ulduar were awesome from a design standpoint, aside from the large amounts of trash. It's a toss-up for deciding which is best if you ask me. Not that I've tried any raids since the first tier of Icecrown Citadel, aside from the first Tol Barad boss. :)

The WOW of old was just a lot more time consuming. It required a huge time commitment if you wanted to get anywhere anytime soon. The WOW of today is more casual friendly in that you don't need 40man raids and bosses that dropped far too few pieces of loot to make progression be anything other than at a snail's pace. As far as player skill goes, I did not find vanilla to be that different from Wrath of the Lich King (which was the last time I played the game. I've played some during each expansion up to WoTLK, but I also had long breaks between that)

I don't think nostalgia for SWTOR is yet allowed, it hasn't even been out for a year. TES isn't out yet. Now, if they're still clunking along after 8 years, then yes, you'll be allowed:)

Supposedly streamlined and much more accessible. Money was still easy as hell to come by, all but the hardest 20 man raid settings was cake, and phasing was supposedly kind of neat.

I didn't play it either, but I was pissed how all balance issues, particularly in pvp, were turning out. Plus, I wanted my fucking life back, tyvm.

More of the same, basically. It introduced some minor new things (vehicles in PvP for an example), and you could see that the devs knew a bit more about what they were doing, so there were a bit more variety in quest designs. Bosses were also a bit more involved, being less about "who can grind down who first".
The drawback was that now that the game was less about item grind/gave you the equipment needed to do things faster, people started to go through content a lot faster, and Blizzard could simply not keep up with the pace that people progressed.

Also, PvP was, as always, not well balanced. WoW is at its heart a PvM game, with PvP tacked on, and it really shows.

Yeah to be honest I was never a fan of PVP at all, hate the idea of "who ever has the highest level, and strongest gear wins" MMORPGs are best for PVE & PVM and co-op.

Unless you put a low gear/level cap (Ultima Online (pre-AoS) & Guild Wars comes to mind)
