Gothic 1, I just love this game and have played it very often as well as Gothic 2 and addon^^ The story is great and the NPC characters you meet are quit cool and after getting used to controls (but shouldn't take long) it's just fun. Oh yeah and there is an inventory with never ending space, great for me, because I like to collect everything ;-) But Risen is also very good, it's after all some kind of followup of Gothic. Onliest part of the Gothic series which wasn't that much fun is the Gothic 3 addon.

Morrowind GOTY, Skyrim (which is a true successor to Morrowind, unlike the bastard child of the family, Elder Scrolls IV, in which the franchise went to hell in a handbasket and took the player along).

Also Neverwinter Nights Diamond.
Of what you've listed, it's a tie between BG2 and Fallout 1/2, with Morrowind and PS:T as runners-up.
icewind dale 1 and 2 .
yeah some might not like it and its probably more of the same as baldur's gate but that isnt a bad thing
That is pretty much a listing of my GOG/Steam/Retail games shelves...
Trying to decide would be a nightmare...

Morrowind, Skyrim, BG/IWD series, Planescape, Fallout series... they are all amazing.
BG2, BG, then Arcanum. I'm sensing a trend here...

I've played disturbingly few of these games unfortunately.
Haven't gotten around to everything on the list yet, so from the games I've actually completed, I'd have to say Star Wars Knights of the old Republic. Great twist, great gameplay, best Star Wars game I've played.

The one game I've been playing but have yet to complete that will definitely dethrone KOTOR is Planescape Torment. It's already fascinating to say the least and the RPG in it, is some serious RPG.
Morrowind is my favourite on there, but you did basically manage to reprint my to-play list. So good job!
Out of these I've played Fable 3, Fallout 1, 3, New Vegas, Gothic, KOTOR 1 and 2, TES3&4. I guess, my order would be Morrowind, Fallout 3, Oblivion, KOTOR 1, New Vegas, KOTOR 2, Fable 3, Gothic.
Morrowind.

Blew me away when I played it when I was younger, and it still does now.
Star Wars: KOTOR.

Sci-fi? Check. RPG? Check.

Those are two of my favorite things when mixed together. Plus, it's a Star Wars game that was good and interesting.

Honorable mention: Fable

Fable was alright, i enjoyed the magic system, i just wish the game was a lot longer... fable 3 a little bit of a disappointment, but if you didn't buy into the hype it's solid.
Morrowind.
Of this list...favorite is Morrowind. Least favorite is KOTOR.
