KneeTheCap: 2. Knights & Merchants (Does this have a campaign? I haven't played this ever, and bought
Yes, and this game is known as a time eater. The first tutorial mission will very likely take you 60+ minutes. Most time goes into buildung up an infrastructure (houses, farms, slaughterhouse, windmills, etc).

the first post is updated, kinda surprised to see you picked pretty good games :)

Should I play them all, or do you want to pick one ?
I would do a tombola. Give each game a number (maybe in the order they're already listed) and let's see what's your destiny: http://www.random.org/
Numbers are for assholes. Play Risen.
I would suggest starting with Ghostbusters: The Video Game. Really feels like a continuation of the movies but is also short enough to knock over quickly and move onto the next. At least that was my experience, but I played it on PS3. Don't know if there is much difference.
Don't like the given choice, so I think you need to buy more good games (these are good games, but you need more!)
GOG 13
What's wrong with starting sequentially? GOG 1.
