Definitely Castlevania: Lords of Shadow. Each vista was better than the last – breathtaking, deceptively peaceful and harbouring unseen dangers. I vividly remember the scene where I first saw a lonely fort on a mountain. But nothing could prepare me for the moment I rounded a mountain pass and saw the enormous castle looming in the distance. This stands out as the greatest visual moment in gaming for me. I was immediately reminded of that part in LotR:

...wall upon wall, battlement upon battlement, black, immeasurably strong, mountain of iron, gate of steel, tower of adamant, he saw it:
Lately, it's Aarklash Legacy. I wish the game wasn't isometric so it could be more immersive, and the player could experience the environments up close and personal.

Skyrim + mods is definitely another.
Super Hexagon. It's such a trippy game with all the rotating,pulsing and even the music adds to it.
If you meant "graphically superior", then yeah, the more modern the game you go, the better it is.
Skryim, Trine 2, etc.

Since you mention "Trippy", I'd say Super Hexagon, Psychonauts, NPPD RUSH, AAAAaaaaAAAaaAA (however it is spelt), Ballpoint Universe and maybe Giana Sisters?
Trippy? Alice: Madness Returns I don't like the gameplay, but the visuals made me play it.
I might get some shit for this, I almost posted it last night and kept stopping myself, but I'm going to have to throw out the Tomb Raider games. Not one single entry in the series but bits and pieces from all of them brought together representing the whole series. The opening temple in #4 with the shadows and reflections, the Stealth Fighter fly-bys in #3, and countless vista shots throughout all the games like when you find yourself on top of the Sphinx and the camera pulls back. Call me a simpleton but I never cease to be blown away by that stuff.
This thread needs more Antichamber.

EDIT: Also, F-Zero GX has some nice backgrounds if you ever get the chance to take a quick glance, which I usually don't. Go first-person mode for some serious rollercoasting.

I had been away from gaming for many years and this was my first game since the mid-90s. It was already old when I played it and I'd never even seen a game played at 1920x1080. Blew my mind. The first time a "dead" Splicer got up off the floor had my heart pounding and I had to take a break. First five or so hours I could only play a bit at a time it was so intense. Thankfully that soon wore off but I found it very immersive and the whole game stayed visually and artistically on point.
I was blown away when I saw Warcraft 2 for the first time. In all my gaming, uhm, career, I've never ever wanted a game more than WC2 when I first saw it. It was one of those : why-would-I-ever-need-another-game games.
Apart from that, I've always adored the artwork included in Dune 2 , especially the House of Ix and the Heavy Barracks.
And of course, I can't forget about Blade Runner! Damn I get the chills just thinking about it - that first time you get to your apartment and you step outside onto the balcony for the first time...cue Blade Runner music with the spinners flying amongst the sky scrapers.

Since I know you're a big fan of the series tinyE I won't give you any shit about this, but I will say that the graphics do look like shit now for the earlier Tomb Raider games :P. At the time of their release though these games were definitely visually very impressive and cutting edge so your picks are totally understandable. :)
