This is indeed how it must be done to keep the onions juicy and well tasting. Otherwise, you'll just burn the onions into a crisp, grasslike state which tastes extremely bitter. With proper heat management though, you'll eventually bring out the natural suger which is abundant in onions (even though raw onions doesn't hint to that fact), which will then caramelize on the surface of the onions.
+1 for application of proper onion frying techniques.
