Except multiplayer doesn't run through Steam. Multiplayer doesn't run through Steam in any game, because Valve doesn't run the servers (except for their own games, of course). Matchmaking runs through Steam. Netherrealm/WBIE will be running their own servers. There's a subtle but critical difference. At best, the argument can be made that there is no server, and that Steam simply establishes a direct P2P connection between two players, but it's still matchmaking.
And personally, I wouldn't care about multiplayer being excised from the DRM-free version, given that online is likely to be dead within weeks anyway.
