Betrayal At Krondor has an option for auto-fight (a button), if you feel you'd win the fight anyway. After that the AI takes over and kills rest of the easy opponents for you, while you just watch.

And yeah, the combat is turn-based.

This might also apply to the sequels, Betrayal In Antara and Return To Krondor, but not sure.

Leroux: Forgotten Realms Unlimited Adventures has an auto battle function, and therefor I assume some or all of the old Goldbox series games by SSI (like Pool of Radiance etc.) might have it, too. But sadly those games aren't available on GOG. :(
But the AI is so utterly retarded that it will make all your characters waste their best missile weapons and spells on the first group of kobolds you meet, like it's their last stand.
As much as I love the Gold Box games, I can't at the moment think of a game with worse AI. Fortunately in practice it's only a problem with the computer controling your own characters, 'cause for the monsters it's always their last stand.

Eador? Not sure it's the type of RPG you're looking for, but it does fit your description quite nicely. It also has an option to skip the battle entirely and autodetermine the results, or you can give the computer control partway through the battle and/or take over again if things aren't going well.
HoMM 3 comes to mind. Not only considered the king amongst many strategy fans but also offers what you look for.

Actually, many if not all of the HoMM games offer that mechanic, i could be wrong tho.
