I've edited the first post of this topic to compile some of the levels we've spoken about. I'll try and keep it up to date so we have a rolling list of awesome environments.

i like the level in God of War where Kratos fights his way back to the surface from the river Styx.
also, the first mine-cart level from Donkey Kong Country was intensely memorable. as was the magic carpet ride in Aladdin on the Mega Drive. Not so much enjoyable as it was hear-attack inducing.
