Before I go on, I apologize for that dreadful title. I couldn't think of anything else :[

On topic, does anybody here appreciate or know of many strategy games where you don't start off with much at all, and then go on from there? Battle Realms is a really good example of this. You start off with a peasant... and that's it :D Likewise, Total Annihilation is also a good one, though not as good as Battle Realms. You start off with one unit, like BR, but the Commander is a lot more capable than a peasant at any rate. A bad example would be Sins of a Solar Empire - you have a whole planet and some ships already out and ready to go.

I like games like this because it's always so much fun to me having a huge empire, but knowing this all started out as a little unit or two. Do you know of many games like this?

Warlords Battlecry series - you only start with a hero, and some units from your Retinue that you can choose before the start of the mission. But you can start with only your hero if that's what you want .

I'll add more to the list later, but off the top of my head-

Smugglers V- start out as simple trader with just a ship, for example, end up ruler of galactic empire.

Pharaoh + Cleopatra- the Pharaoh game, at least, mentions something about starting out as just a local leader building a nomadic settlement, and then you end up building grander cities via promotions, but I haven't played the games myself.
Urge to post "Licurg and a prostitute" is strong!

But yes, Empire Earth...
Those were some of my favorite games. The original Empire I played to death as well as Warlords and Warlords II Deluxe. Same with Civilization. Since then so many strategy games follow that theme, many already mentioned.

sounds like ai war: fleet command, which i really wish would be released on gog
Nearly all the HOMM games :P. But since they are not real time nor pure strategy I am not sure they fit your needs.
The Guild
Any Sid Meier's Civilization game will do, as you start with only one settler (and maybe one warrior).
Addicting genre actually. Dune and KKND (availabile on GOG) series are absorbing.
Warzone 2100 - free at wz2100.net. In skirmish and online play you can begin with just 2-4 builder units.

Same here. I very much prefer such RTS games/missions, to those where you have a complete town/base already.

The first Age of Empires had many such levels. I loved it when you merely had some stone age town and a couple of peasants, and had to rush from there to advance in ages and build an optimized base. Sometimes it was even a good idea to abandon your initial base, and quickly migrate to another place which was safer and maybe closer to raw materials.
