First of all, hello to the community, this is my first post :D

After that, I'm asking you guys a question: I'm interested on buying "The Witcher" on GOG and I also like having "physical" copies of my games so i download and print DVD covers and all of this things. My question is, is there any way to split the game in two parts like, when I'm installing it it says something like "insert DVD 2" or something like that? If is not, how is the best way for making backups for this game or other that are more than 4.7 GB?

Both installer versions (1.x.x.x and 2.x.x.x) should support files on different media, though in both cases you'll have to skip the integrity check, since it will fail (due to missing files). During the installation process, it should ask you the location of the next file, in which time you swap dvds and continue the installation process (at least according to support).
I would suggest though to wait for installer version 2.x.x.x (if it hasn't being updated yet) because they said they'll change the file sizes to fit better on a DVD, thus needing 2 dvds instead of 3 for The Witcher.

The install files are already split into 6 parts for The Witcher 1 and 10 parts for The Witcher 2.
