So when I see a game is listed to work with Windows 7, I won't have a problem? Even thou the game is older and not disclosed on the original packaging to work with Windows 7, G.O.G. has configured it to run on Windows 7?

Yep. They come packaged with a DOSBOX launcher or other config files that helps it run on newer systems.

Ocassionally since each computer is different you may encounter some glitches but if you do encounter problems, check the forums or support for each game as someone has usually posted a fix.
