I own an iPod touch, have owned an iPod 20gb player, and a Zune 80gb, and I can say without doubt that the Zune is the best sounding one. You can just tell when you hear it.
The headphones that came with it were the best I've used too. Great sounding and magnetic heads, meaning no tangled up wires. Don't understand why this isn't done with all headphones.
Had a stupid argument a couple of years ago with a professed audio anorak who was arguing all mp3 player sound quality is the same with the same pair of headphones. Sound quality is determined by the sum of the player's technical parts as well as the engineering choices that have been made, so it's possible some of the Sansa devices are better sounding.
