OK I don't quite get the whole fearing of the past thing. I'm gonna go with Grim Fandango, though.

Why does it fit? BECAUSE I SAID SO.

Dream of the Stars because of Star Wars.
Fear of the past because the protagonist has lost his memory and was a bad, bad man in the past.

I haven't actually finished Grim Fandango yet so I can't comment.

I have, that's why I'm saying it's Knights of the Old Republic.

Day of the Tentacle, no?
Please, Please, Please let it be LucasArts, even though I already own most of their games I'd buy them again in a second even if it does include Outlaws which I've not played in years.
I'm a little bit nervous that no hint really targets an adventure game yet. The first could be The Dig, maybe. With good hope the last one (fear the past) could be Day of the Tentacle from the tenatcles point of view, but that's all a little bit far-fetched.

And another big question: Would we get the remakes or the original Monkey Islands games. Or, the worst case, none of them.

Nah the protag in KOTOR1 was canonically male, KOTOR2's was canonically female. Presumably they never made KOTOR3 because they couldn't get a hermaphrodite looking quite right
