1. Fallout: New Vegas (heavily modded)

My character was a sniper. If I found a new location swarming with enemies, I would wait for the night and circle around using my binoculas to find a weak spot. I would pick off most targets with a sniper rifle, using bullet time to perform amazing headshot combos and than go in and finish the job with a high caliber pistol or automatic rifle. The thrill before battle was amazing, bullet time kills rewarding and I somehow bonded with my character, as I was rising his skills ingame, my aiming and reflexes improved as well. The open world and weapon diversity were also important.

I know, sniper games, but most of them lack good close combat and offer little choice when it comes weapons and positioning.

2. Call of Juarez (dunno which installment)

So there was this one open level in this game where you could hunt rabbits and ride a horse. I know, its nothing special but it was so well made compared to the rest of the game it was the only thing that I remembered. I spent some time just speeding on my horse through the valley looking at the mountains in the distance, it looked just like a movie shot. When an arrow was realeased, bullet time (arrow time?) would kick in and I could see it slowly travel towards my target and kill it.

Its one of many things that Skyrim failed to deliver: horse combat, bow/crossbow mechanics and hunting were horrible.
