If Freespace 2 counts as a Flight Sim, then that would be my personal favorite. If not, then Red Baron is probably the title-holder... I had some good times with that game when I was much younger...

Probably the flight "sim" I have always loved is the first I have played: accolade's Ace of aces (1989). I think if was my fist pc game
However i have spent a lot of time also on A-10 Tank Killer and on Fighter Bomber
I would have to say Wing Commander 3. No other flight sim has come close to taking so many hours of my life.
My favorite flight sim on GoG is easily Il-2 Sturmovik, though Red Baron 3D is certainly a blast in its own right (got it on CD when it came out). Outside of Gog, I'd have to say Falcon 4.0's a fun one as well, and is a lot more playable than its hardcore reputation tends to suggest.
I am a massive WWII nerd, so IL-2 Sturmovik wins by a mile. That or MS Flight Simulator X just for when I feel like flying a 747 upside-down over the Atlantic.
Freelancer if you will count it, if not IL-2 Sturmovik.
I have to say Red Baron. I had fun playing it as a kid, even if I wasn't that good at it. I still have the game somewhere in my house, but I can't remember where it is right now.
