Let me explain:

After playing around with Ultima Underworld the Stygisn Abyss and loving it I just realized, "Did anyone remade this game in Morrowind, Gothic, etc."

Dungeon Siege has the Ultima 5 and 6 remake mod, Neverwinter Nights has Ultima 4.

Is there one for Ultima Underworld?

not that I ever found, closest I ever found was a japan only ps1 remake, but it would be nice to see something like that being done.

I would really love one too, the controls in the original game are WAAAAAY better than Daggerfall's default controls, I still prefer to play this in Morrowind as a mod.
Why don't you use the Ultima forum for these questions? Anyway, there have been a few attempts to write source-ports or remake the game as mods:
http://underworld.ultimacodex.com
Unfortunately none of them really went anywhere. The most complete attempt to work from would be the maps for Unreal Trournament, because the engine is there and the areas are there, the reast wuld be just scripting to get life into the levels and make the game play like Ultima Underworld.

I played all the way through Ultima Underworld and contrary to my first impression it actually plays pretty well. You should definitely read about "default mode" in the manual, it essentially makes the icons on the left hand side of the screen obolete, reducing the amount of clicking to a minimum. Movement is done via WASD keys (not exactly WASD but close enough), so you don't have to use the mouse for walking. The only thing I found annoying was jumping and flying. Other than that the original engine is fine.

Yeah, that whole experience has aged quite well, I think.

Yes, it did. Still an Ultima Underworld with modern(ish) graphics and with the rest of the gameplay kept intact would be very nice. Unfortunately that would be quite a big project. Projects of this scale can be pulled off (as Lazarus and Ultima 6 Project show) but they can also fail or just die away (as hundreds of other ex-projects show). Still, if someone makes this I would be very happy!
I don't think it would be that big of a project. Ultima Underworld seems huge because of the maze-like design, but there really isn't a lot of places and NPCs. The question is if it would be worth the effort. Ultima V and VI have aged much worse than Underworld and they are more important to the Ultima canon.
There actually was the start of an Underworld mod for Morrowind I found years ago. It's only the first layer of the Abyss, though, since the author of the mod wasn't sure if/how much trouble he could get into. It's pretty well done.
