If you only have one drive & only one partition on that drive(Which should be how things will be for you once you clone/copy the old HDD onto the new one, ditch the old drive and plug the new drive into the old drive's sata port on the mobo.) then it will automatically(usually) be set as c: upon booting the system if you did everything else correctly.

I don't think I got an answer to my optical drive question. Do I just unplug it from the motherboard while transferring hard drives?

If you only have two sata ports on the mobo then yes. Just make sure you have the disk cloning/copying utility on a thumb drive or flash memory card(Whatever your system supports) as you can't run it(I believe) off of the HDDs themselves and if you unplug the optical drive you won't be able to run the HDD copy utility off a CD/DVD(r or rw) because you have to disconnect the optical drive from the mobo sata port to plug in the new HDD to the same sata port while you copy the data over.

I'm happy to say it seems like everything works perfectly. The HD is running pretty loudly, but I'm sure that will go away once the system gets used to it.
