I was wondering is anyone knew how to get a hold of games that have been discontinued and no longer sold.

Off the top of my head, I can think of Second Sight (on both GOG and Steam) and James Bond 007: Blood Stone (on Steam).

I can imagine how hard it must be to achieve this, but if there was some way, I'd be very grateful. :)

I'm afraid the only way would be with someone that bought gift copies...

And yeah, Second Sight back would be amazing ;p

unless someone still has a copy and wants to trade it or give it, then basically no there is no other way.

The only possible way would be if someone was clairvoyant enough to predict a game's removal and thus buy extra gift copies of the games in question. That would be the only legal way.

Not the only way.

The other LEGAL way would be for the publishers to do a new deal with GOG.

Ummmm....
Currently (like right now for example), it's the only way.
As others have said, if someone has a gift code they bought before the game was pulled that would still be a valid way of getting the game.

For now, best thing we can do for removed games is to vote for them on the wish list (e.g. Second Sight) and contact the publishers of these games to encourage working something out.
I'd tell you. But then I'd have to kill tinyE...

Many have tried, few have failed. :o
