If I ever go for my concealed carry permit and actually DO then carry, then the situations might be different. That doesn't necessarily mean automatically engaging someone; in cases 1. and 3., I believe the legal response is to NOT engage the person unless directly threatened. In those cases, I am not directly threatened so the response should be to get out (or hide) and call 911. The law generally favors the action of excaping the situation if possible. Same generally holds true if you have any sort of weapon, including just your fists and feet.
If its more like the recent shooting where the chance of escaping alive is slim, I'd like to think I'd go down swinging. Impossible to know until it happens, though.
Pretty much, in #1 any other response would definitely get the cashier killed. A knife to the neck is an extremely touchy position to be in as even just tripping can lead to death or permanent injury. 2. Run like Jesse Owens and call 911

In two, either run or just give them whatever they want. If they don't leave you alone after that, you're fucked to begin with no matter what you do.
#3 call the police, if there isn't any reason to believe that pulling your own weapon is the only option, the correct option is calling the police. And really, even if you do have a weapon and pull it, the correct answer is still calling the police damn near immediately.
HereForTheBeer: The thing is, it's only a thought exercise. Unless it actually happens, we don't know for certaint how we'd each react. For all you know, you might charge in and help the assailed person - proclaimed pacifism or not. And even in my self-armed examples, I might be frozen in fear. Many years ago, in a couple situations not quite as dire as those described, I've charged in to help. But who's to say that would happen next time? Maybe my older and wiser(?) self would have the preservation synapse kick in and send me running away.
I hope we never have to find out, but that's really the only way to know.
Precisely, last few times I was in those sorts of situations I was stone cold, so I could probably get away with using firearms. (Although, obviously not in China :-P ) But, I've found that I've never actually needed one as just giving the person what they wanted has always been the correct answer. I don't carry a lot of money or valuables, so even if they aren't caught I'm not out too much. Certainly less than taking somebody's life or potentially losing mine. I hope we never have to find out, but that's really the only way to know.
Now, if ones back is literally to a wall, that's a completely different matter. Occasionally people don't get to just give the person whatever.
