P1na: Honestly, you should probably see the first Fate/Stay night anime. It is not very good, and it includes some stuff from other scenarios that could be considered spoilers, but it is the prologue. Most other stuff will assume you already know the characters and such.
That was true for the movie and the game but not really for Ufotable's UBW.

IMHO the 2014 UBW series is more a sequel of the Zero anime based on the game's events rather than an direct adaptation of the game's UBW path. It consider that you know what happened in Zero but apart from that it is rather self contained.

I'm kind of a Nasu fan :P So I'm watching the anime, hated the film and read every single one of his stories... Except for Mahoutsukai no Yoru since I didn't find an english patch yet and my japanese is nowhere near the level to understand his crazyness :P

Niggles: Out of curiosity how different are the three alternate stories?
Without giving any spoilers, they're completely different branching storylines if that's what you mean, although the prologue and the first week or so of the Grail War is essentially the same in all three (basically an introduction) after that they go in radically different directions, characters that only appear briefly or not at all in one route are more prominent in another. Fate is the "generic" save-the-world plot which focuses on Saber (the blonde girl) in which the plot unfolds in a more traditional way. UBW focuses on Shirou's character and his internal struggles with idealism and him discovering his hidden magic powers, it focuses more on Tohsaka (the black-haired girl). Heaven's Feel is very different, is more personal and character-driven, also more morally ambiguous and disturbing, it focuses on Sakura (the purple-haired girl).

hmmm... maybe so. I haven't seen it, after all. Maybe I should shut up and not do recommendations based on the original material if things have diverged a lot.

Other than recommending the original material. It's awesome.
BTW, after this thread I checked how the fan translation of Fate/Hollow ataraxia (the sequel) was going and... it seems they finally finished it. Now I just need to find some time to get to it.
