I always wondered in what way do they remove the cd check on the older games.
Does anyone know if they literally use cracks from the internet, or do they develop their own method?

Depends on the game. Some likely use cracks that have already been available elsewhere, some are probably modified by the developer/publisher to not require a crack, others use ISO files or floppy images (DOSBoxed games frequently do that).
