WW2:
Soldiers: Heroes of WW2 (Awesome game, makes Company of Heroes its bitch.)
Castle Sim:
Stronghold
Stronghold Crusader.
Everything else:
Haven't played.

Don't forget all the Blizzard stuff. StarCraft, WarCraft III, etc.
Rise of Nations is also really fun. It plays like AoE with a heavy emphasis on macro over micro, to the point that in the endgame everyone has expanded to fill almost the whole map, and you're managing cities which are supporting a battle on every border. Combat units are intelligent enough that after a point, it's better use of your precious time to just send your troops to a general location on a map and keep managing your cities. RoN is the closest thing I've played to a real-time (abit conflict-oriented) version of Civilization.
If you enjoy building massive empires over micromanaging dozens of troops, it's an amazing game.

Still haven't played Age of Empires, but I will second Empire Earth since I know it's made by AoE people. And Age of Mythology is very similar to Empire Earth, so there's another suggestion

The main problem with RoN is that it's...well, very very linear. It's just a race to the top of the tech tree, and from what I could tell, it was just a constant zerg rush. Not much strategy involved, unlike Supreme Commander where geographical positioning and timing is more crucial than what most people think.
Of course, I don't play RoN multiplayer, so I could be wrong on this, but it just seems huge on spamming rushes.

Settlers II is indeed the dog's bollocks. Although those could be any bollocks, I suppose. Maybe if you did it like this: U^_^U <3
It's nothing at all like AOE, though.

Age of Mythology - it's done by the same developer and is pretty much the same game only with mythological creatures and stuff. Fun game I really enjoyed it back when it came out.

Speaking of Settlers, which is the best in the series? How do the newer versions like Heritage of Kings differ?

Basically there are no games quite like Age of Empires. Empire Earth is the closest.

I'll also mention Paraworld. Very much in the AoE mould, but with dinosaur units in it. Intro here. It's very cheap now too.

Some will say Settlers I, or possibly Settlers II is the best of the series.
Heritage of Kings basically goes away from the tried and tested concept of the earlier Settlers games and tries to be some kind of Settlers / Warcraft 3 hybrid. It's not a horribly bad game, it's just that it gets none of the mechanics quite right, and becomes neither a Settlers nor a Warcraft game.

I've only played 2 and 3 (and S2 - 10th Anniversary Edition). I didn't like the direction they were going with number 3, so I can only imagine it's gotten worse and worse. I think 2 is the best. This is also evidenced by the fact that they did a completely faithful remake of Settlers 2, rather than any of the others. I so hope the 10th Anniversary Edition makes its way to GOG eventually. They updated the game completely, whilst keeping everything exactly the same, paradoxical as that may sound. And they fixed most of the few annoyances the original had.

Depends what you enjoyed about AoE, of course... but AoE 2 was great, AoE3 was not bad, but limited...
Empire Earth 1 and 2 are SUPER to play skirmishes with, they have a really tough AI and loads of cool ages to work through. I mean, you get Mechs!
Rise of Nations is awesome too, but shorter. I like the idea of city influence for borders rather than fixed area borders... you can even play a game where you don't fight at all, just "out influence" the opponent. Also I love the idea of taking over opponent's cities instead of razing them. I used to think this was the sequel to AoE, actually, until AoE3 came along.
For more tech-based games, Supreme Commander and of course, its granddaddy, Total Annihilation.
Gotta have em all, that's the only way to be sure. :)
