As a fellow Eador fan I would recommend Imperialism. One of the few games I played as much as Eador.
And also second the previously mentioned Kings Bounty Remakes, Elven Legacy,Heroes3 and Master of Magic.

Really don't understand how Warcraft games can be hard to you when you're ok with AoE1 and Rise of Nations.
From your like list I would say you like building things, but dislike anything fast-paced.
So I have a perfect game to recommend, this one needs and deserves more love than it's getting...
