I think we have one or two bartender games here on gog. But games about wine in specific? I played a lot of games, but i have never seen something like that.
There's a German business simulation about growing, manufacturing and selling wine:

Not sure if that's what you're looking for...or are you more interested in games about drinking and alcoholism?

Wine is fine, but I prefer kwas.
An ice cold dry white like Sauvignon Blanc is always welcome :) First thing that comes to mind wine related in a game setting is the first Witcher. A fair maiden asks you to bring a bottle of wine to a, windmill is it? However at that point it seemed as if the story intended to progress into the nearby city, from the outside areas where everything had happened up to that point. I thought perfect! the city is a perfect place to find a bottle of wine. But alas, continuing with the story into said city made it impossible to return to the first act's setting with the windmill, so I never saw the fair maiden again :(
I half want to replay the entire first part of the game again just so I can finally, belatedly hand the maiden an exquisite bottle of fine wine. Will probably have to steal the wine from some unfortunate soul though...
Gabe Knight and the Blood of the Sacred.

Is weird.
Maniac Mansion: Day of the Tentacle has a puzzle that requires vinegar. You obtain the vinegar by having Hoagie (who is two hundred years in the past) give Thomas Jefferson a bottle of wine to put into his time capsule and then having Laverne (who is two hundred years in the future) retrieve the wine, which has turned into vinegar over the past four hundred years.

Off topic, I can't drink wine. Even a small amount gives me headache, especially red wines.
