The Maltese Falcon:

I think it's only missing one major scene from the novel.
Captain Blood:

They merged a couple of characters and omitted some episodic sections that could be easily left out, but for the most part it gets the tone and feel of the book right. The only real nitpick I have is that the movie is somewhat understandably vague about why Blood is sentenced to slavery (he was a Catholic physician who treated a Protestant man during the Monmouth Rebellion), while the book is quite plain about it.
