(Specifically "Vampire's Kiss" - loved that movie, but no idea what Fairfox is asking, to be honest. Started an answer about cheesy "vampire good guy" plots, but I don't even think it's about that.)

A game where you only pretend to be a vampire??? Or where your character is mentally ill and thinks s/he's a vampire, although s/he really isn't?
Eh, no, can't think of something like that right now. But I'm not really a fan of vampires anyway.
Daggerfall:

While it *is* possible to become a vampire, it turns out that you can create a custom class that has the vampire's biggest limitation (taking damage in sunlight), yet isn't actually a vampire. (Hint: If you fast travel cautiously with a character with this drawback, you will arrive during the night rather than the day.)
There's a vampire costume in Costume Quest. The kid wearing the costume isn't a real vampire of course but the monsters in the game are vulnerable to pretend attacks.

There's a vampire costume in Terraria that only drops during Halloween.

Bravely Default has a Vampire class that you can switch in and out of.
