Hi,
I understand how reclaiming works, but if I reclaim the cd-key from Clear Sky and CoP, will the steam versions still work as well as the GOG versions? I am wondering because at https://www.gog.com/reclaim, it says something about the keys not being able to be used again in similar websites/ campaigns

Yes. It just means you can activate it once here. If you give the key to someone else it won't work for them because it's on your account now and forever.
