I want to buy it on GOG and I'm curious if it includes the Spanish voices from the original

If the game's description says "English only" it's usually "English only", yes.

I thought I wrote this in the forum about the game.
Game have no (not yet) dedicated forum here.
Its list standard MULTI5 as text. Thre is 5 language specific files, they have same size. Original game did have Dub/VO for this game at last for standard MULTI5 for sure.

its often uncomplete info for language for any digital store and platform. Nkt so rare when only English listed there is other languages even voice dubbing.
Not so rare either when only ENG have audio checkmark but some or all of them have audio dub in facts.

Language table are no use cause of randomness, not only on GOG store. PCGW wiki are better source but first hey just copy tore information, sometimes looking for files. Further approves needed. Really needed. Its the same as stores - mostly info just copy-paste just like publishers do on storefront pages.
And files itself - including subj game - are not guaranteed too. If original english file store only text - all languages there also text only, cause they are the same size.

It is 50/50 absolutely.

You also can ask on dedicated game Steam forum or spanish forum.

Looks like that game has no dedicated subforum yet (the forum link on the game's page leads to the General Discussion ([url=https://www.gog.com/forum/general)https://www.gog.com/forum/general)[i[/url]], as you can see, when you hover your mouse over it).

If you don't trust GOG or PCGamingWiki ([url=https://www.pcgamingwiki.com/wiki/The_Thing:_Remastered#Localizations]https://www.pcgamingwiki.com/wiki/The_Thing:_Remastered#Localizations[/url]), you're best bet would be to ask someone who owns the game and can check the different languages for you.

I don't own that game, therefore I can't help you with that.

Since this thread doesn't show in its title, what exactly you're looking for, I'd advice you, to create a new thread.
One, where the title already gives away, that you explicitly ask owners of the game, if Spanish audio is supported (I doubt it, though).

You know, something like:
"To owners of "The Thing - Remastered": is Spanish audio supprted in game?"

That way, more people may feel inclined to read your thread (especially owners of "The Thing - Remastered", of course).
