Is that accurate?
I think that generally applies only to old games where GOG itself applies additional fixes to make the game work on modern PCs. For new-ish indie and AAA games (which Skyrim is too) where the publisher is still around and selling the game elsewhere too, I don't think GOG does that kind of testing, generally.
The same goes to old classics where the fixes have been applied by some other company than GOG, e.g. all the old classics that Nightdive or DotEmu releases. I don't think GOG really tests them either as it is not GOG who is applying the fixes to make them work on modern PCs.
It may be though that GOG e.g. smoke-tests that the offline installers work for all games, and maybe also help some publishers/developers with Galaxy integration, but I think only the aforementioned "old games where GOG itself applies fixes" are the ones that may get the famous "we playtest the whole game, playing it from the beginning till the end, to make sure it works" GOG testing treatment.
I am just assuming here, but just using common sense there. That's how I would do it if I was running GOG!!!
