Naturally there is TB that everyone knows and some of us loves but other than that I would say:

Elder-Geek https://www.youtube.com/channel/UCwzLnfNSQRXnzVH56aR0Tig

He gives fair and balanced reviews and other video game related stuff. Check out his "Hype and anti-hype" video for at good example (https://www.youtube.com/watch?v=-Sqg2V6dQhE).
Matt Chat: https://www.youtube.com/channel/UCE98xefVUXmbvQfe-wNS8oA - Interesting interviews with classic PC gaming folks.

Ancient DOS Games/Pixelmusement: https://www.youtube.com/channel/UCUxuCVwzAsu41TI7UjOJYTA - Just well-done, relatively succinct retrospectives with a focus on obscure DOS games.

Strafefox: https://www.youtube.com/channel/UCtt_NEKZ4MoH4O7BT3SbXTA - Not very prolific but he makes very well-produced retrospectives on classic console games, mostly Sega.

I mostly gravitate toward channels that are about putting the subject matter ahead of the personality, so I usually tune out if the person running the channel is on-screen too long or if they start telling really bad jokes.

Sorry, too busy playing my own games to watch Ulube adverts.
My youtube subscribtions are mainly for entertainment and most of gaming channels fail to keep my attention when I watch my youtube feed while eating my breakfast so the ones I find interesting enough and also attractive are:

Lazy Game Reviews:
Reviews of old games, some recent games, old hardware. Short and instructive:
https://www.youtube.com/user/phreakindee

World Of Longplays:
Full perfect walkthroughs of old games (mainly consoles), kind of speedruns but played "normally". What's interesting is that they have a HUGE video library so it's really interesting to find complete videos of unknown titles

Tpiom: Lazy Game Reviews
Opinionated reviews, commentary, and snark on games and more. Retro PC games, The Sims, Oddware, thrifting!

I like this guy, subbed. Will continue to check out some of the other ones mentioned.

It's not so much about watching these videos, but listening to them (for me) as I'm home alone doing computer work all day long and it helps keep me from going crazy (too late) to listen to people talk about stuff, preferably of interest to me.

I also endorse lazy game reviews.

Also

Super Best Friends @ https://www.youtube.com/channel/UC84X0epDRFdTrybxEX8ZWkA

Just enjoying the more rediculous elements of eighties and nineties culture whilst gaming across most genres.

Manga Minx @ https://www.youtube.com/channel/UCTcc3KiX3RYXhi96vI_jJPA

Lots of esoteric games and total absence of "gamer gurl" bullshit.

Ross Scott at Accursed Farms https://www.youtube.com/channel/UCJ6KZTTnkE-s2XFJJmoTAkw

He created Freemans Mind and Civil Protection (First one was yeeears back). Quite intellegent with a stream of conscious style of humor.
Ben Croshaw https://www.youtube.com/channel/UC-Q4WBqNtMF_2GbIsGjic4A

Jokes drier than your grandmas cunt.

Previously Recorded https://www.youtube.com/channel/UCC1jCliC-puUaK1Zg7QY0hA

The same guys behind the Best of the Worst and Mr Plinkett reviews. Very funny.

Larry Bundy Jr https://www.youtube.com/channel/UCJVdNvvuvOnthuWVQjYff2w

Ran segments on Xleauge.tv and was formerly Screwattack Europe. British charm and wit. Nice guy too.

Jon Tron https://www.youtube.com/channel/UCdJdEguB1F1CiYe7OEi3SBg

Co creator of Game Grumps makes some good stuff. Unpredictable humor and pretty off the rails. Great singer.

Others like Plauge of Gripes, Super Bunnyhop, AVGN, Halloween4545, Necroscope88 are worth checking out too.
For playthroughs and quicklooks:
For me these have more to do with the personalities than the games themselves.

CohhCarnage: https://www.youtube.com/user/CohhCarnage
Why ? because he is all about the games and a positive attitude.

Greenspeak: https://www.youtube.com/channel/UCUSoUbcyGjmaCjO52vKec7g
Why ? its Jeff Green, he is very funny to watch. He hasn't been on in a while though.

Kay Plays: https://www.youtube.com/channel/UCu3T-57vLRVEjF8viOEjm9g
Why ? she has a slow and methodical approach to gaming that I like, and a calm personality.

Squirrel: https://www.youtube.com/channel/UCSeb5KSN6BC1c0WwEjUzM_A
Why ? watching his videos is always relaxing and interesting.

VintageBeef: https://www.youtube.com/user/VintageBeef
Why ? because I think he has a funny personality.

Giant Bomb: https://www.youtube.com/user/TheRealGiantBomb
Why ? because they can talk about meat and still be entertaining to me.

For reviews and information

SlasherJPC: https://www.youtube.com/user/slasherjpc
Why ? because I think he is the most open-minded reviewer out there, which is what I look for in a reviewer; someone who can look at things from more than one perspective...an extremely rare thing in gaming media.

Team VVV: https://www.youtube.com/user/TeamVVV
Why ? my favourite place to get new racing game footage and news.

Inside Sim Racing: https://www.youtube.com/user/simracingtonight
Why ? lots of tech reviews as well in-depth racing game coverage.

Gengar78: LGR:High quality reviews!... Although I much prefer his retro reviews to his never ending onslaught of Sims stuff.
I agree with your sentiment on the Sims, however those videos seem to get him the most views, so apparently there's a very large number of people who are still very much interested in that game.
I generally hate the youtube gameplay videos where someone is talking over the game. As if I really need someone to tell he is now picking up that sack in Ultima Underworld, and found a torch in it. Yes, I clearly saw that's what you did. Stop talking over the game music and audio that I am trying to listen to.

I wonder if those guys talk to themselves constantly when they play games alone? "Now I pick this sack, now I walk forward in the dungeon, oooh spooky, OH SHIT WHAT IS THAT?, oh it was just my own face reflected by the monitor..." etc.

When it comes to game reviews, I actually prefer reading one. It can be accompanied by some short Youtube video showing a bit what the gameplay is like. It doesn't have to be a full video review.
